ASA is getting ready to launch the Premier Issue of Cooking in the Sand? A collection of Duner Favorite Dishes!

We have a great variety of Appetizers, Breakfasts, Dinners and Desserts - but could always use more. If you have some trusty favorites that you'd like to see in print, please share with us!

I appreciate the welcome to the boards. I just came on board the ASA as the Merchandise Shipper and have had great fun so far. In my back and forth email train with Flo, we talked about her dream of the recipe book and I volunteered to head that up and make it a reality. So I'm doubly motivated!

Vince, thanks for the recipes for doing a turkey over T-day. I have always done the deep fried thing, but was getting tired of the mess. So I cooked it in the ground, it was the easiest way to cook a turkey ever, with no clean up, just fillthe hole back in..........thanks.

I would put together an all T-day meal recipes section.

Roasted Pork Tenderloin with Autumn Vegetables and Fruit

Ingredients

Vegetables and fruit

2 cups (500 mL) carrots, 1 inch (2.5 cm) chunks
2 cups (500 mL) parsnip, 1 inch (2.5 cm) chunks
2 cups (500 mL) mini red potatoes, cut in half
3 pears, peeled and cut in 8 slices each
3 apples, peeled and cut in 8 slices each
2 tbsp (25 mL) olive oil
1 tbsp (15 mL) fresh rosemary, finely diced, or ½ tbsp (7 mL) dried rosemary

Pork

3 pork tenderloin* 12 oz (375 g) each
2 tbsp (25 mL) olive oil
3 tbsp (45 mL) grainy mustard
2 tsp (10 mL) dried thyme

Directions

Preheat oven to 350º F (180º C).
Place the cut carrot, parsnip and potatoes in a large microwavable bowl. Add about cup of water and microwave on high for 8 minutes. Remove from the microwave and drain water. Add cut fruit, olive oil and rosemary. Toss to coat.
Mix together olive oil, mustard and dried thyme for the pork. Rub onto the pork tenderloin and place pork into a glass baking dish. Bake for 30 minutes or until a meat thermometer reads 160º F (71º C).
At the same time, place vegetables and fruit on a baking sheet covered in parchment paper or lightly greased. Bake for 30 minutes or until vegetables are tender. Turn the vegetables and fruit over two times during cooking to prevent sticking.
Before serving reserve about 1 cup (250 mL) of the roasted fruit, and 1 pork tenderloin for the Autumn supper salad recipe. The fruit and pork can be packaged separately and frozen to be used at a later time.
Slice the rest of the pork and serve with the roasted vegetables and fruit.

How is the finished product compared to a oil fryer? It would definitely be a lot cheaper not having to buy the oil everytime.

Just great and you can do/apply rubs where you can't in an oil fryer - there's no hot oil to deal with and you get drippings for gravy. No stuffing though. Also great is prime rib & baby backs which are never done in oil. There's an optional basket for veggies.

How long does it take to cook a turkey with it?

10 min. per pound or about 7 minutes per pound longer than oil. But accounting for oil heat up and cool down time, it takes about half the time. I don't have to worry about anyone knocking over 3-5 gallons of hot oil while it cools and dealing with the used oil.

One downside is that you are limited to 14-16 pound turkeys. A 24 pounder will never fit.

That sounds excellent, I've always used a deep fryer, but like the web site says, it's a pain getting rid of the used oil.

I have an unused and unopened container of deep fry oil - 35 lbs - more than enough to do a 24 pound turkey. Free to anyone that wants it. FOB my house in La Verne or Roadrunner on certain days TBD.
