I think my floor pan is stainless steel, and the side panels are just sheet metal. However, I do have a piece of diamond plate aluminum under my seats.

I think the diamond plate is 1/8". I just went to a metal shop and was able to get a scrap piece for a reasonable price.

Floors- I think I used 6061, can't remember thickness, but less that 1/8" . (got a couple sheets cheap at Davis metals)

Sides, and roof, etc. - 3003 H-14 (?), like .050-.063

6061 can be used for most anything that doesn't have a bend in it. If you have bends, then a 3000-5000 series aluminum is better suited. As you go down in number, generally speaking, the aluminum gets softer and easier to work. This is why if you are looking for strength, 6000-7000 series is preferable. 7075 aluminum is very high quality material, but is also expensive. Generally speaking, it comes down to what you are trying to do with it, and how much you are willing to pay. .030 is pretty standard thickness unless there's gonna be some good forces on it. Then you should move up in thickness. .040, .050 etc.
